Snacks/Appetizers

Rosemary Nuts
Great for parties, snacks, hiking, gifts.
Someone made these for my husband for Christmas. He loved them.

1 16 oz  Roasted nuts, assorted
4 T          Rosemary, chopped (not powder)
¼ T         Cayenne Pepper
1-2 T       Brown Sugar
2 T          Butter, melted
Toast nuts in 350 oven until light golden brown, about 10 minutes
Combine other ingredients.
Add hot nuts.
Toss to coat thoroughly.
Serve warm or room temperature.
Store in air tight container after cooled

Bacon Wrapped Kielbasa
1 lb kielbasa (sausage)
1 lb bacon
1 ½ c brown sugar
3 T mustard (I used spicy brown)
3 T vinegar
1 T pepper
Slice kielbasa into 1/2 -1 inch pieces.
Cut bacon in half.
Use slices to wrap kielbasa.
Line baking sheet with aluminum foil and spray with oil.
(If possible use cooling rake on top of baking sheet, to avoid sticking and sticking in grease)
Mix remaining ingredients.
Brush over prepared wraps.
Bake 350 for 10-15.

Popcorn
Pizza Popcorn
10 c popped popcorn (1 c unpopped will make this much)
1/3 c butter, melted
¼ c Parmesan cheese
2 T pizza flavoring (or ½ t garlic powder, ½ t oregano, ½ t basil)
½ c mini pepperoni
1 t salt
Combine.
Some recipes add ½ c mozzarella cheese and melted it in oven.
(Was good without the cheese addition. And Simpler.)
Enjoy.

Taco Popcorn
10 c popped popcorn (1 c unpopped will make this much)
1/3 c butter, melted
2 T taco flavoring (from envelop) (I used entire envelop—too much)
1 t salt
Combine.
Enjoy

Soft Carmel Popcorn
(Ever notice carmel popcorn is hard? This recipe make it softer and creamier. Secret is the sweetened condensed milk.)
10 c popped popcorn (1 c unpopped will make this much)
2 ¼ c brown sugar
1 c corn syrup
1 c butter
1 can sweetened condensed milk
1 t vanilla
Heat butter, sugar, syrup.
Boil for 2 minutes.
Add condensed milk and vanilla.
Combined popcorn and stir.

These I haven’t tried yet, but want to:
Honey Popcorn
10 c popped popcorn
1/3 c butter
¼ c honey
½ salt
½ t vanilla
Heat butter.
Add honey, salt and vanilla.
Pour over popcorn.

Peanut Butter Popcorn
10 c popped popcorn
½ c butter
¾ c brown sugar
½-3/4 c smooth peanut butter
20 large marshmallows
Heat oven 225.
Melt in microwave butter, brown sugar, peanut butter and marshmallows in 1 minute increments, stirring between times, until melted
Coat popcorn with mixture. (make sure no unpopped kernels.)
Spread on cookie sheet.
Bake 225 for 20 minutes, stirring halfway.

S’More Popcorn
10 c popped popcorn
¼ c chocolate Magic Shell
1 c mini marshmallows
14 graham crackers, crushed
Mix.
Allow popcorn to dry before eating.
Serve with napkins.

Sour Cream and Onion Popcorn
10 c popped popcorn
1/3 c butter, melted
3 T dill
3 T Parmesan cheese
3 T powdered milk
1 ½ T onion powder
1 t garlic powder
1 t salt
½ t pepper
Drizzle butter over popcorn.
Combine all seasonings.
Sprinkle over popcorn.
Mix.

Nacho Cheese “Dorritos” Popcorn
10 c popped popcorn
1/3 c butter (melted)
2 T nutritional yeast
½ t garlic and onion powder
½ t cumin
½ t chili powder
Pinch cayenne
1 t salt
Drizzle butter over popcorn.
Combine all seasonings.
Sprinkle over popcorn.
Mix.
