Dinnertime
Trying to eat "healthier" recipes.
Creamy Garlic-Parmesan Chicken
2 chicken breasts, sliced across thinly
¼ t salt, garlic, parsley
5 T coconut oil
2 T garlic cloves minced
¼ c chicken broth
1 c coconut milk
½ c parmesan cheese
2 c spinach, cut small
¼ t red pepper flakes
Squeeze of lemon juice
Season chicken slices with salt, garlic, parsley.
Melt coconut oil over medium-high heat.
Sear chicken in hot oil, 5 minutes per side, until cooked through.
Remove from pan.
Saute garlic until fragrant, 30 seconds.
Add chicken broth. Cook till reduced by half.
Reduce to simmer. Add coconut milk.
Stir to avoid sticking.
Season with salt and pepper.
Add parmesan cheese.
Stir and simmer 1 minute to allow cheese to melt and sauce to thicken.
Add spinach.
Add chicken to pan.
Squeeze lemon juice, and if desired red pepper flakes.
Serve alone, or over rice or noodles.
Panfried Fish (Keto-friendly)
4 white fish fillets, skinless, boneless
½ t salt, garlic
½ c coconut oil
For crust:
3 garlic cloves minced
1 t Italian seasoning
1 c glutton-free flour
½ c parmesan cheese
2 eggs, beaten
Melt coconut oil in skillet.
Pat fish dry with paper towels, especially if fish was frozen
Season both sides of fish with salt, garlic, pepper
In one shallow pan, beat eggs.
In a second shallow pan, mix garlic, Italian seasoning, parmesan cheese and flour.
Dip fish in egg mixture, covering both sides then in coating mixture.
Place in pan with melted coconut oil.
Cook 3-4 minutes each side.
Remove to plate with paper towel to absorb excess oil.
Garnish with lemon and parsley.
Serve with tartar sauce* and rice.
Tartar sauce can be made with 1 c mayonnaise, 3 T dill relish, ¼ onion minced.
Philly Cheesesteaks
1 lb rib eye steak or other steak-like cut, (I used version steak!)
1 t salt
1/8 t black pepper
1 yellow onion, diced
1-3 green, yellow, orange peppers (depending on preference) diced
8 oz mushrooms, sliced
Coconut Oil
3 T Worcestershire Sauce
Provolone cheese
Buns (optional, good without)
Slice steak as thin as possible, against the grain, helps to have it semi-frozen
Heat meat over medium-high heat for 5 minutes.
Add oil.
Add onion and peppers, cover. Cook without stirring 4-6 minutes.
Stir, continue to cook until meat is no longer pink, and onions and peppers are browned, 2-4 minutes.
Add mushrooms, cover, allow to sit.
Place sliced provolone cheese on each roll.
Place over hot pan, with lid removed to melt cheese slightly.
Scoop meat with spatula into bun as it is lifted.
Poor-man’s version of Philly Cheesesteaks
(but in no way poor tasting!)
1 lb lean ground beef
3 T Worcestershire sauce
1 onion, diced
1 bell pepper, green or red or yellow, or mixed, chopped
1 c beef broth
1 t salt, pepper
8 oz provolone cheese
12 oz mozzarella cheese
Buns (unless making keto, no buns needed, good without.)
Cook ground beef in Worcestershire sauce until browned. Drain fat.
Add onions and peppers. Cook until softened.
Stir in beef broth, salt, pepper, more Worcestershire sauce.
Mix.
Layer mozzarella cheese, then provolone cheese across top.
Broil until cheese melts.
Broil or toast buns lightly.
Add meat to buns, if using.
Enjoy.
