Breakfasts
Need to feed a crowd? These recipes can be prepared, frozen and ready before your crowd comes.
These also work for the tin-foil meals for camping.

Ham and Hash Brown Casserole
1 – 30 oz bag hash browns
10 oz sour cream
1 c shredded cheddar cheese
½ c bacon bits
2 cans undiluted cream of chicken soup
½ c melted butter
1 c shredded cheddar cheese
1 lb cut ham
½ c shredded cheddar cheese

Grease 9 x 13 pan.
Layer in order given. Or Mix if so inclined.
Bake 350 1 hour.

Hash Brown and Sausage Casserole
1 oz bag of hash browns
1 lb sausage, or even ground beef seasoned with taco, browned
10 oz shredded cheddar cheese
2 cans mushroom soup, undiluted and condensed
1 can evaporated milk
8 eggs
Best made night before. Remove 30 min before baking.

Bake 350 1 hour or until middle sets.

Make Eggs for Sandwiches
Grease muffin pan well
Put one egg per muffin spot.
Bake 350 15-20 minutes

Throw between a breakfast biscuit, with a slice of cheese, ham and a piece of salami.
Wrap in aluminum foil to grill or unwrap to microwave for a quick meal or for crowd.
Perfect size for egg muffins and breakfast biscuit sandwiches.

Egg Bites
I have just found my new favorite for my kitchen—the Egg Bite Mold for my One-Pot.
But they can also be used in the oven, air-fryer, or microwave because they are made of silicon.
Why do I like it?
I can make quick breakfasts for a week or two at one time.
They are good grab-and-go, or while trying to eat less, I don’t have to look at other foods.
The single servings, especially desserts, help me not eat all of it at one time. 
Can be frozen. 
Their bite-sized portions, though small, are just right for a taste and a meal.

Mine came with the trivet attached to the bottom (nice!), silicon covers (so they can be used in oven, microwave, One-Pot and air fryer), two layers of molds and lifting/carrying handles (no burnt fingers).

Egg Bites
Need a quick breakfast that’s filling?
Look no further.
One bite is filling—even for my husband.
They’re like a dense, power-packed bite of flavor.
(To make them not so dense, I’ve seen recipes that add cottage cheese. I haven’t tried that, but would add protein and lightness.)
Can add or subtract additions, according to what you have and like. (for example: green, yellow, red peppers (diced), sausage, taco seasoning, hot sauce)
(I didn’t keep track of how many eggs it took,  but at least 8)
8 eggs (whipped)
Spinach leaves (cut small)
1 onion (diced)
1 lb. bacon (cut small)
Cheese (handful) of your choice (cheddar, mozzarella,…) 
Seasonings of your choice: salt, pepper, Italian seasoning, 
1-2 T of spicy mustard 
Cut bacon into bite-sized chunks, saute’ with onion until cooked.
Whip eggs.
Combine all ingredients.
Spray egg mold with oil (initially I saturated the mold, this made the eggs greasy; only a quick spray is needed)
Spoon 2-3 T egg mixture into each mold. Allow space for expansion.
Place silicon lids on them. (If not available, use aluminum foil)
Place 1 c water in One-Pot.
Insert egg molds into One-Pot. Stacks two molds.
Close and seal One-Pot lid.
Select PRESSURE COOK/MANUAL for 12 minutes. (time may vary with machines, others say 9 minutes, mine was runny)
Natural release for 10 minutes. Then manual release.
Cool to touch.
Remove from molds (with spoon, or turn upside down on plate and push from bottom).
Enjoy!
Can Refrigerate or Freeze. Reheat as needed.

Pancake Bites
Make your own favorite pancake recipe or store-bought mix.
Add your choice: blueberries, strawberries, chocolate chips, or cinnamon. 
Spray molds.
Pour 1-2 T batter in each egg mold. Allow for expansion.
Cover with silicon cover or aluminum foil.
Place on trivet.
Pour 1 c water in bottom of One-Pot.
Insert egg molds into One-Pot. Can stack two on top of each other.
Close vent for sealing.
Select PRESSURE COOK/MANUAL for 9 minutes.
Release pressure naturally for 5 minutes (no more, pancakes will dry out), then manually.
Remove lid and molds.
Cool slightly before removing bites by turning upside down on plate and squeezing sides and pushing from bottom.
Top with syrup and additional fruit.
Can be frozen.
Reheat in microwave or oven until heated through.

Pineapple Upside Down Bites
1 can pineapple chunks, drained, save liquid
1/3 c butter (melted)
2/3 c brown sugar
Maraschino Cherries
1 box yellow, or butter cake mix
½ c butter (melted)
3 eggs

Spray egg bite molds
Drain pineapples, reserving 1 c of juice
Combine 1/3 c butter and brown sugar.
Spoon 1 T of mixture in each egg bite mold.
Place 2 chunks of pineapple and 1 cherry in each mold.
Prepare cake mix as directed, use pineapple juice instead of water and butter instead of oil.
Spoon 1-2 T batter into molds. Allow room for expansion.
Place 1 c water in One-Pot.
Use trivet in One-Pot.
Do not cover molds, but place three canning jar rings as spacers so another egg bite mold can be placed on top (total of two egg bite molds).
Close One-Pot lid. Set to seal.
Select PRESSURE COOK/MANUAL for 12 minutes.
Natural release pressure for 10 minutes, then release remaining pressure.
Cool to touch, 10 minutes. Flip on plate, push down centers of each mold to remove bites.
Enjoy!
So Moist!
One cake mix will make four molds, will have to make two molds at a time.
Will have to make brown sugar and butter mixture twice.

Cheesecake Bites
Crust
½ c graham crackers, crushed
2 T butter, melted
1 T sugar
1 t cinnamon
Mix,
Place 1 T in each egg mold.
Press down.
Cake
8 oz cream cheese (softened)
½ T corn starch
½ t vanilla extract
1 egg
¼ c sugar
1 T lemon

Whip cream cheese until smooth.
Add other ingredients.
Divide between egg molds.
I filled 2 egg molds. (Made smaller bites, just a taste, perfect size).
Cover molds.
Place 1 c water in One Pot.
Use trivet.
Place egg molds in One Pot.
Set PRESSURE COOK/MANUAL for 20 minutes.
Natural release for 10 minutes, than manual.
Remove from One Pot.
Cool.
Refrigerate 3 hours.
Tip upside on plate, press gently on bottom of each mold to release cake.
Top with fruit, jams, chocolate sauce or other desired topping.
Just a taste of perfect flavor!

Brownie Bites
Use own recipe or box.
Spray molds.
Fill 1/2 - 2/3 full, allowing for expansion.
Cover with silicon cover or aluminum foil.
Put 2 cups water into One Pot.
Insert molds.
Set lid for sealing.
Set PRESSURE COOK/MANUAL for 20 minutes.
Natural release for 10 minutes, then manual.
Remove from One Pot.
Cool. 
Remove from molds.
Moist! (First time was gooey, I up-ed the cooking time.)
One box of brownie mix will do 3 molds.
This way you can freeze what you don't want to eat. (or shouldn't eat all at once.)

Keto French Toast Bites
I include this, not because it was great, but it was OK--to endurable.
But I've tried it as crepes, it didn't work out.
If you are expecting toast--like bread, it's disappointing.
If you just need something different—this is it.
Unique texture. Endurable taste---with maple syrup.

6 eggs
6 oz cream cheese, softened
1/2 t baking powder
1 t cinnamon
Blend. 
Spray molds.
Distribute between two molds.
Cover with silicon cover or aluminum foil.
Put 1 c water into One Pot.
Insert molds.
Set lid for sealing.
Set PRESSURE COOK/MANUAL for 20 minutes.
Natural release for 10 minutes, then manual.
Remove from One Pot.
Eat with maple syrup.
